Apple Crisp

 Topping 

3/4 c. AP Flour

3/4c. instant oatmeal

1 tsp cinnamon

1/3 c. brown sugar

stick of butter (sliced, grated, or blended)

Freeze until ready to top


1 1/2 lb of Fuji apples chopped

2 TBSP of lemon juice over apples

1/2 c granulated sugar

1 tsp cinnamon

1/2 stick of butter (grated or sliced)

1/2 c. pecans

Mixed together well and fill dish, cover with frozen topping

Cook on 375 for 45-50 min

Erin's Favorite Hot Chocolate

 Erin's Favorite Hot Chocolate

8 quarts of Dry Milk

16oz powdered creamer

3 1/2 cups of powdered sugar

1/3 cup of powdered cocoa

20oz of Nesquick

Mix together well.  Fill coffee cup 1/3 and add warm milk

Red Velvet Cupcakes

Red Velvet Cup Cakes  (3 Layer Cake)                                       
Mix together well:                                                     
1 1/2 c of sugar (2)                                                         
2 /12 c AP flour (2)                                                       
3 tsp cocoa  (4)                                                              
1 tsp salt (1 1/2)
1 tsp baking powder (1 1/2)

Add:
1 1/2 c cooking oil (2)
1 tsp vanilla (1 1/2)
1 c buttermilk (1 1/2)
1 oz red food coloring
1 tsp white vinegar (1 1/2)

Add on at a time:
2 large eggs (3)

Cook on 350 for 22 minutes (25)
Makes 36 cupcakes


Icing:
Softened Cream Cheese
Softened Butter
Box of 10X sugar
tsp vanilla
Mix together for 2-4 minutes

German Chocolate Cream Cheese Cake

German Chocolate Cream Cheese CakeIn a large mixing bowl add:

11oz of Cream Cheese
2 sticks of salted butter
1lb powdered sugar
1 pkg of German Chocolate

In a second mixing bowl reserve 2 1/2 cups of the cream cheese mixture for the icing.

To the first mixing bowl add:

1/4 cup of crisco
3 eggs room temperature
2 1/4 cup cake flour
1 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1 tsp vanilla

Bake at 350 for 30-35 minutes

In second bowl of icing add:
1 lb powdered sugar
1/4 warm water

Coconut Cream Pie

Coconut Cream Pie

Toast 7 oz of sweetened coconut on a baking sheet at 350, stirring often (I use Baker's).  Save a few and sprinkle on the topping.  Either merange or whipped cream.
Bake a frozen pie crust at 375 until slightly brown.

Remove both and let cool.

In a batter bowl, melt 1/2 stick of butter
Add 1/2 c. water
One can of Evaperated Milk
Add 3 eggs ( If making meragne, use 4 egg yolks and save the whites)
Mix well 
Add 3/4 c. of sugar
In a seperate cup, beat 3TBSP of corn starch in a 1/2 c. of cold water.  Make sure the corn starch is blended and there's no lumps
Add to the batter bowl and whisk REALLY GOOD!

Cook for 3 min in the mircowave, remove and whisk again!!

Cook another 3 mintes or until the mixture is the consistency of pie filling.  It will not get thicker.

Remove from microwave and add 3 TBSP of butter and 2 tsp of vanilla.

Pour into pie crust. 

If you're doing a merangue, cook on 325 until brown.  If whipping cream, wait til it is COMPLETLY COOLED before you cover the pie.  (Ask me how I know!)

Today is Mama's 80th birthday and I made her favorite...Chocolate Delight!  This is the recipe she wrote and gave me in "her cookbook"!  It was so delish that I didn't even get a picture!

Lemon Pie

Daddy's Favorite Lemon Pie - it has no eggs and it's no bake!

One block of Cream Cheese - mix really well to get the lumps out and add

Can of Sweetened Condensed Milk - scrape down the sides and bottom and add

2 tsp of Lemon Jello

1/2 cup of Lemon Juice 

After all ingredients are mixed well add

One large container of Cool Whip
 

Makes two 9" graham cracker pies.  You could use 10" and add some more Cool Whip on top!

Dirt Cake


It was Hannah's birthday meal and she requested her favorite dessert, Dirt Cake.

Make 2 regular boxes of vanilla pudding with 3 cups of milk. Mix until it thickens. Let sit in the fridge while you mix together the remaining ingredients.

Crush a pack of regular Oreos (Hannah doesn't like them uniform so use a ziplock back and rolling pin)

In a large bowl, cream together a block of cream cheese and a stick of butter. Scrape sides.

Add a cup of powdered sugar and mix well. Scrape sides. 

Then add your pudding and mix everything together.

Use a large cool whip and fold it in the mixture.

Layer pudding and Oreo crumbs ending with the Oreos

Cream Cheese Pound Cake


 Cream together:

1 Block softened Cream Cheese
3 Sticks of soften Butter
3 Cups of Sugar

Add

6 Eggs one at a time

Scape sides of bowl and add

2 tsp of vanilla
1/4 tsp of almond flavoring

Scrape sides of bowl and add

3 Cups of Cake Flour

Cook 1 and a half hours at 325

Devil's Food Cake with Seven Minute (Miracle) Frostiong

1 1/2 C Sugar
1/4 tsp Cream of Tartar
1/4 tsp Salt
Whisk together is a heat proof bowl. Add: 
2 TSP Lite Corn Syrup 
4 Egg Whites 

Using a hand mixer, mix on low speed until blended well. 
Place bowl on top of large pot of bowling water to make a double boiler. 
On high speed beat for SEVEN MINUTES 

Take off heat and add: 
1-2 tsp of vanilla. 
Beat off the heat for 2 minutes or until you have stiff peaks. 

Last 24 hours. Does not need refrigerating.

Erin's Chocolate Chip Cookies



1 cup crisco
2/3 cup sugar
2/3 cup brown sugar
Mix well
Add 2 eggs beat well
2 1/4 cup AP Flour
1 tsp soda
1 tsp salt
Add semi-sweet choc chips
Cook 14 mins at 350


Oakies


Chocolate Oatmeal "No Bake" Cookies

1 Stick of Butter

2 Cups Sugar

4 TBSP Cocoa

1/2 Cup of Milk

In a large pot, bring ingrediants to a boil stirring continuously.  Let boil for 1 minute.

Immediately remove from heat and add:

1 tsp vanilla

2 Cups of Instant Oats

1 Cup of Peanut Butter

Spoon onto a cookie sheet or parchment paper and let cool.


Not every recipe has significance but this one certainly does.  Growing up my mama made these at least once a week.  We would eat them before they could cool.  Sometimes mama would put them in a china coffee cup and we would eat them with a spoon.  Delicious!
