Green Beans
I pressure my beans 20 minutes at 10lbs. This takes time to figure out because every stove is different. You have to adjust your heat until the weight jiggles a couple of times every minute. I recorded it so you would know what it sounds like.

I pack my jars tight and cover with the water I blanched them in. I leave head space to add about a tsp of table salt. My canner holds four jars.

Chow Chow
I use a small wash pan to mix my peppers
Use the food processor to chop bell peppers. I like yellow and red because it looks pretty!
Chop some banana peppers
And jalapenos. We like it with a little kick!
This is my pressure cooker. I fill it almost half full with chopped cabbage.
I add several white onions
Add your pepper mixture
Then comes the sugar
I add 4 to 1 water and cider vinegar.
Let cook on the stove for several minutes. It will get darker.
It made 13 pints
